NAOMI’S ULTIMATE QUINOA RANCH CAULIFLOWER BURGER
PREP TIME: 50 min
COOK TIME: 10 min
Total time: 1 hour
Ingredients
● 1 cup crumbled cauliflower
● 1 cup cooked quinoa, cooled
● 1 tablespoon olive oil
● 140 g breadcrumbs Heinz Shake’n Bake Original
● 1/2 cup Swiss cheese cut into small pieces
● 2 large eggs
● 1 teaspoon sea salt
● 1 teaspoon black pepper
● 1 tablespoon of chopped fresh parsley
● 1 small zucchini
● 1/2 cup finely shredded purple cabbage
● 1/4 cup Heinz Three Cheese Ranch Salad Dressing
● Oil for cooking
● Buns
● Arugula
Step-By-Step
Step 1 - Heat oven to 400°F degrees.
Step 2 - Place the crumbled cauliflower on a parchment-covered baking sheet, drizzle with oil. Roast for 30 mins, turning halfway until the cauliflower is soft. Cook the quinoa until it is soft (18 min). Set it aside. Transfer the cauliflower and the quinoa to a large bowl. (If you don’t have the crumbled cauliflower then you need to use a food processor until it is chopped but not pureed),
Step 3 - Add all the other burger ingredients (olive oil, cheese, breadcrumbs, eggs, salt, pepper and parsley) to the bowl and mix well. Form into 10 patties, a generous 1/2 cup each. Place the patties on the baking sheet and chill in your fridge for 20 minutes.
Step 4 - Heat a splash of oil in a large, non-stick frying pan over medium-high heat. Add half the burger patties and pan fry until golden on each side, about 5 minutes per side.
Step 5 - Spread your burger buns with Heinz Three Cheese Ranch Salad Dressing then stack with a burger patty, zucchini slices, some arugula, and the cabbage.
Tips & tricks: Bread crumbs are essential for your burger to hold together as well as chilling the burgers for at least 20 min.
